Amarantus

Amarantus L. (»unverwelklich«, Amarant, Fuchsschwanz, Samtblume), Gattung der Amarantazeen, meist einjährige Kräuter mit wechselständigen, linearen bis eiförmigen Blättern, polygamen oder diklinen, knäuelig gehäuften Blüten in oft sehr reich verzweigten, end- oder seitenständigen Ähren oder Trauben. Etwa 45 Arten auf der ganzen Erde bis auf die arktische Region. A. caudatus L. (Gartenfuchsschwanz, Tausendschön), in allen warmen Gebieten, mit langen, dunkelroten Blütenähren, die einem buschigen Tierschwanz gleich bogig herabhängen; A. speciosus Sims., oft bis 2 m hoch, mit roten Blättern und pyramidal rispigen, dunkel purpurnen Ähren; A. tricolor L. (Papageienfeder, Tausendschön), in Ostindien, China, mit 30–60 cm hohem Stengel, grün, gelb und rot gefärbten Blättern und ansitzenden, dichten, winkelständigen Blütenknäueln. A. Blitum L. (Euxolus viridis Moq.), mit ausgebreitetem Stengel, eiförmigen Blättern und grünlichen Blütenknäueln, in Süd- und Mitteleuropa, Ägypten, Arabien, Ostindien, wird, wie A. prostratus Balbis (E. deflexus Rafin.), in Italien, Frankreich und Süddeutschland, und A. silvestris Desf., in Frankreich, am Rhein und am Litorale, auch in Taurien, als Gemüse gegessen. Die Samen von A. Blitum benutzt man wie Hirse. A. frumentaceus Buchan. wird in Ostindien als Brotfrucht gebaut. A. oleraceus L. (E. oleraceus Moq., Gemüseamarant) ist in Ostindien, Java und Ägypten beliebte Gemüsepflanze. Vgl. Willdenow, Historia Amaranthorum (Berl. 1790).
