Ang-Khat, ein in China, besonders in der Provinz Kanton, hergestellter und zum Färben von Nahrungsmitteln benutzter roter Farbstoff, wird durch Kultur eines Pilzes Monascus purpureus Went. auf gekochtem und zerriebenem Reis erhalten, erscheint im auffallenden Licht grünlich und kommt als Pulver oder in Gestalt purpurfarbener Reiskörner in den Handel.
