Bullant (spr. bülāng), Jean, franz. Architekt, wahrscheinlich in Ecouen um 1525 geboren, gest. 10. Okt. 1578 in Paris, studierte in Rom und erhielt dann von dem Connetable von Montmorency den Auftrag, das um 1530 begonnene Schloß in Ecouen zu vollenden. B. begründete dadurch seinen Ruf und wurde durch ein Dekret vom 25. Okt. 1557 zum Generalaufseher sämtlicher Bauten der französischen Krone ernannt. Nach dem Tode Heinrichs II. fiel er indessen in Ungnade, und erst 1570 wurde er zum Architekten der Königin Katharina und zum Aufseher ihrer Bauten ernannt, als welcher er die Tuilerien weiterführte. Er leitete auch die Arbeiten am Schloß zu Fontainebleau und die Ausführung der Königsgräber in St.-Denis. In den letzten, von ihm ausgeführten Teilen des Schlosses von Ecouen hat er die Formen der italienischen Renaissance harmonisch mit den nationalen Eigentümlichkeiten verbunden. Er schrieb: »Reigle genéralle d'Architecture des cinq manières de colonnes« (Par. 1564–68).
