Olivīl C14H18O5+H2O findet sich im Ölbaumgummi neben Harz und Gummi, bildet farb- und geruchlose Kristalle, schmeckt bittersüß, löst sich leicht in Alkohol und kochendem Wasser, in wässerigen Alkalien und Ammoniak, schmilzt bei 120° und gibt mit übermangansaurem Kali Vanillin.
